I live in Shizuoka and know Shizuoka tea fairly well so I couldn't resist responding to your post.

I went to the Canton Fair (Chinese Export Commodities Fair) in Guangzhou, China last year. One reason I was there was to source Chinese green tea for export. There was only one tea that came close to the quality of Japanese tea. That was an organically grown tea by a company called Caiunjian. I can't recall but I think it was from Hunan province.

The main distinguishing factor in the taste and quality of Japanese Green tea is that the leaves are steamed and rolled. I'm not a tea expert (talk to me about coffee!) but the teas I tasted in China that resembled Japanese tea were also steamed.

I also teach nutrition and energy metabolism so your comment that green tea is a "fat burner" was, well, no offence, but this statement is patently false. The only "fat burners" are the cells that consume fat for energy. What determines whether you burn fat or sugar (and whether you get fat of loose weight) depends on the level of the hormones insulin and glucagon. Excersise has a simular affect to glucagon, which is to cause a reduction in stored fat.

The only other factors are drug-induced. The so-called fat-burning teas are actually chemically-induced by interfering with normal energy metabolism. Herb or not, a drug is a drug. Thankfully, green tea is not one of them.

There have been many claims about the health benefits of green tea, some are wild and fantastic (thank the tea marketeers for that), some are based on good science.

Most of the benefits of green teas can be traced to its various antioxidants. Some of those are lost in the heating (both in processing and when you add hot water). Enough remain, though, to be able substantiate some of the health claims.
